Keto Chicken Enchilada Bowl

The Keto diet is definitely on the rise. I have heard so many people recently talking more and more about this diet/ fad/ lifestyle and the amazing results they have seen. Whether you’re trying to loose weight, tone up, or just eat a little more healthy, the Keto diet is a great diet to try. There are lots of different diets and plans out there, but with any diet, always listen to your own body and do what makes you feel good.The hubby and I have joined the Keto train and we’ve really enjoyed it so far. It can be hard sometimes when you love Mexican food and Pizza as much as I do… (we sometimes cheat). Dave is way better at preparing meals and really eating true to the Keto diet.

So you’ve probably been hearing a lot about this diet, but you may still be wondering what kind of diet it is. This diet is a low-carb diet, that helps kick your Ketosis in gear. Ketosis is when your body is under going a very normal way of processing what you have eaten. Due to Keto being so popular lately, I have been able to find some really great recipes on Pinterest. Here’s one of our favorites we’ve tried!

Keto Chicken Enchilada Bowl

My love for Mexican food is strong… I mean like so strong that I could probably eat it every single day and never get tired of it. Chips and Tacos are so good, but they most definitely are not Low -carb items. So when I saw this awesome bowl, I got really excited! This is a super easy recipe that even I could make! If you’re new around here, I don’t like to cook, the hubby is the cook of the household.

I used the skillet to prepare this meal, but you could use a crop pot and even make some items ahead of time if you’re short on time.

Ingredients you’ll need:
2-3 Chicken breasts ( about one pound of chicken)
3/4 cups red enchilada sauce
1/4 cup water
1/4 cup onion
1 4oz can green chiles
1 12oz steam bag cauliflower rice

Toppings I added: Avocado, Jalapenos, Cheese, Roma Tomatoes, Chopped lettuce, and pico de gio
Seasonings for taste: cumin, chili powder, cayenne powder

Instructions:
In skillet over medium heat cook the chicken breasts until lightly brown. ( I would cut the chicken up into smaller chunks to help in cooking and also make sure the chicken is all the way thawed out).
I thought the chicken I added was thawed all the way, but it was still a little frozen on the inside and it took way longer to cook.

Add enchilada sauce, chiles, onions, water and reduce the heat to simmer, covered
Cover and cook until the chicken is cooked through and shred the chicken
Start dicing preferred toppings while chicken is cooking ( this will save you some time later)
*Make sure you use a big enough bowl to make it easier when shredding
Add chicken back into the sauce and continue simmering for an additional 10 min or until most of the liquid has been soaked up
Prepare the cauliflower rice per bag instructions.
Top the rice with the chicken, cheese, avocado and other preferred toppings and Enjoy!

Because I love super spicy things, I definitely added some more spices and added tapiteo to the shredded chicken. I also drizzled more on top to make it extra spicy.
