I know it’s the new year and Christmas is over (which makes me so sad, because I love Christmas so much), but I just had to share some of my favorite Christmas cookies with Ya’ll! My family has a huge baking day on Christmas Eve every year and it is something I always look forward too. These are some super easy cookies, and you can make them whenever you want something sweet to enjoy!
The first cookie is one of my favorites! I love sweet and salty things, and this is the perfect mix of both!
The Ritz Cracker Cookie
Items you need:
Chocolate Candy Coating ( Chocolate or White Chocolate)
Small pot for the stove, Heating pan, or Microwavable bowl
A cookie sheet
1. Place 2/3 chocolate squares in your heating pan or bowl.
*If you are melting on the stove, make sure you keep it on low and continue to stir so that the chocolate doesn’t start burning on the bottom.
*If microwaving, start off microwaving 2/3 squares in 30 sec intervals. In between heating, stir.
This year we used a self heating pan, which helped the chocolate melt well and stay melted without burning… I would definitely suggest using one of these!
Take a Ritz cracker and spread the desired amount of Peanut butter on it. Top off with another Ritz to create a cracker sandwich.
Place the Ritz cracker sandwich into the melted chocolate and cover it completely. We use a fork to grab the cookie and place it on the parchment paper to dry.
Place on the parchment paper to dry and add some sprinkles for fun and to add some color.
Let the cookies sit for about 10 min or until chocolate is dry, and Enjoy!
The second cookie is one that melts in your mouth and is sweet but not too sweet!

Russian Tea Cookies
Items you need:
1 cup butter or margarine
1/2 cup confectioners’ sugar
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup finely chopped nuts (pecans)
Heat oven to 400 degrees.
Mix together the butter, sugar, and vanilla. Work in flour, salt and nuts until the dough holds together.
Shape dough into 1-inch balls and place in the oven on baking sheet.
Bake 10-12 min or until set but not brown. Roll in confectioner’s sugar while still warm.
Cool and then roll in sugar again.
*Makes about 4 dozen.
Place them in the freezer to keep them fresh longer!
The third cookie is so much fun to make and super easy. If you have children and need to occupy them while you cook or work on something else, these will become your favorite. Sugar cookies are the best and so much fun to decorate!
Frosted Sugar Cookies
Items you need:
1 1/2 cups softened butter
2 cups white sugar
2 teaspoons baking powder
1 teaspoon salt
Take your large bowl and mix together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt.
Cover, and chill dough for at least one hour (or overnight).
Preheat your oven to 400 degrees F (200 degrees C).
Roll out dough on floured surface 1/4 to 1/2 inch thick.
Cut into shapes with any cookie cutter.
Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
While the cookies are in the oven, start making the frosting. We like to make the frosting in mugs or small bowls.
Mix the powdered sugar, vanilla and milk together. Beat in enough milk to make it smooth and spreadable. Then add the food coloring for the color!
Once the cookies are cooled, the fun part will happen- decorating!
