Sausage Stuffed Acorn Squash

Squash Season= Amazing Recipes from the Hubby!

So my husband is the cook of the house and thank the Lord- I do not enjoy cooking but I sure enjoying eating! My husband has been creating some amazing Squash recipes this fall and I thought I’d share some with you. The one I am sharing with you today was amazing and if you like acorn squash, you will love it!

You will need:
An acorn squash
Breakfast sausage
Red Peppers
Celery
Red Onion
Minced Garlic
Olive Oil
Thyme Sprigs
Salt and Pepper
Maple Syrup
( if you would like other veggies, you can probably add more, but these were all the hubby added)

Instructions:
Cut the Acorn squash in half and brush olive oil on the inside of the squash, making sure that you evenly distribute the oil on both halves. Take the maple syrup and pour a small amount into both halves, then brush it into the squash. Add two sprigs of Thyme for each half and salt and pepper for enhanced flavor.


Place in the oven for 40 min at 400 degrees. This is the time that you prep all of your vegetables to save on time.

Begin to brown the breakfast sausage ( the hubby uses a cask iron skillet, but you can use a bigger skillet if you don’t have a cast iron skillet). Place it on medium to medium high.

Once the sausage has cooked, place the sausage in a separate pan and begin to cook the vegetables in the same pan. Once the vegetables have gotten softer, then add the sausage back in and cook for another 5 min or so. 

Then add all the sausage and veggies to the Squash and place back in the oven for about 3 min on broil.

Take it out and let it cool a bit and then dig in! It was sooooo good! All gone!
